Shrimp:  A Great Dinner Choice For The Whole Family

 Not sure what to make for dinner?  Shrimp is a low fat and low calorie option you can enjoy as part of a balanced diet.  Take a look at these recipes courtesy of EatShrimp.com.


Shrimp Brushetta

Ingredients
8 oz. cooked small or salad-size shrimp
4 tomatoes, ripe, diced
4 tablespoons balsamic vinegar
1/2 cup olive oil
1 tablespoon lemon juice
1/4 tsp. garlic powder
1/4 tsp. black pepper
1 tablespoon fresh chopped basil
1 loaf Italian bread

Instructions
Preheat oven broil.  Rinse shrimp and let drain in colander.  In a mixing bowl, combine tomatoes, olive oil, balsamic vinegar, garlic powder, black pepper, basil and lemon juice.  Mix well.

Slice bread 1/4 inch think, brush with olive oil and toast under broiler until lightly brown.  Remove from oven.  Spoon shrimp mixture on top of toasted bread and serve immediately.


Seafood Lasagna

Ingredients
4 ounce lasagna noodles
28 ounce jar spaghetti, pasta sauce or favorite homemade recipe
6 ounce package cooked salad shrimp, thawed and drained
4 ounces Surimi Seafood, thawed and thinly sliced
1/2 cup low-fat ricotta cheese
1/4 cup freshly grated Parmesan cheese
1 tablespoon minced fresh parsley
1/8 tablespoon black pepper
2/3 cup shredded low-fat mozzarella cheese

Instructions
Heat oven to 375 F.  Prepare lasagna according to package directions.  Empty spaghetti sauce into saucepan and simmer for 10 minutes until thickened and reduced to about 3 cups; stir in shrimp and Surimi Seafood.  Combine ricotta cheese, Parmesan cheese, parsley and pepper in small bowl.  To assemble lasagna, place half of noodles in 8 x 8 inch casserole dish.  Top with half of seafood sauce and drop half of ricotta mixture by small teaspoonful on top.  Sprinkle with half of mozzarella cheese.  Repeat layers.  Bake for 35 minutes or until bubbly.  Let stand 10 minutes before cutting.
